Turkeywoods Farm created Hickory Nut Syrup as a new way to capture the wonderful flavor of one of North America’s finest native nuts. We believe we are the world’s first and only commercial producer of gourmet hickory nut syrup.
Our syrup begins with locally gathered hickory nuts, collected each fall from the woods and fields around us—often in direct competition with hungry gray squirrels. Hickory nuts are held in high esteem as one of our best-tasting native nuts, with a rich, distinctive flavor, but their hard shells and intricate interiors make extracting the nutmeat notoriously difficult. We developed our own process for capturing that exceptional flavor and transforming it into a unique gourmet syrup.
The result is a light, sweet syrup with a delicate, naturally nutty flavor. It is lighter and sweeter than our Shagbark Hickory Syrup and has a character entirely its own.

Try it with
Wonderful over vanilla ice cream, pancakes and waffles, or drizzled over cornbread, butternut squash, oatmeal, sliced fruit, and cinnamon-apple slices. It also makes an unusual ingredient for desserts, glazes, cocktails, and other recipes where a touch of sweetness and nutty flavor is welcome.
